4-6 links Bouttes Boudin (or Rice Dressing)
4 medium bell peppers
Shredded Cheese
1 can Rotel
• Preheat Oven to 350 degrees.
• Cut off the tops of the bell peppers and clean out the insides.
• Sprinkle a little cheese in the bottom of each pepper.
• Remove Casing from boudin and fill each pepper.
• Top each with a spoonful of Rotel.
• Place a generous amount of cheese on top of each one.
• Cover with foil and bake at 350 degrees for 45-50 minutes.
