----Boudin dip/spread----
8oz sour cream
8oz cream cheese
1/2 cup fresh green onions chopped
3 links Bouttes Boudin
Place boudin in microwave to warm, remove from casing. mix with above ingredients. spread on favorite crackers or dip with chips. makes about 4 1/2 cups
----Cajun Bell Peppers----
1 1/2 lbs Bouttes Boudin
4 medium bell peppers
1 cup Bread crumbs
8oz. can tomato sauce
Cut off top of pepper and clean inside. boil peppers in lightly salted water for 5minutes or until tender. Drain. open boudin and and stuff loose boudin in peppers. place in a greased casserole dish and bake at 350* for 25-30 minutes. pour on tomato sauce and sprinkle with bread crumbs for the last few minutes of cooking. top with cheese if desired.
-----Stuffed chicken Breast (or pork chops)-----
1lb Bouttes Boudin
4 boneless chicken (or thick pork chops)
1 tsp black pepper
1/2 tsp red pepper
1 tsp salt
1/2 stick butter
Butterfly the chicken breast (or pork chops). stuff with equal amounts of boudin. place on greased baking sheet, season.
Bake at 350* for 35-45 minutes. Baste 2-3 times during cooking. Great also cooked on outside grill.
